1 oz Gin <Short Path>
1 oz Campari
1 oz Simple Syrup
1/2 oz Lime Juice
~4 oz Grapefruit Soda <Izzy>
Combine everything except the soda in a shaker with ice. Shake, strain into an ice filled Collins glass, and top with grapefruit soda. Give a quick stir to combine. Garnish with lime wedge
Hot weather continues to be the theme of late here in Boston, so refreshment is of utmost importance. That means ice. That means fizz. That means citrus. Sounds like a Tom Collins to me. This old standard combines gin, lemon, sugar and club soda to combat the scorchiest of heat waves. As delicious as it is, sometimes I want just a little more kick in my drinks. Luckily, the Tom Collins is as good a template for exploration as it is a thirst quencher.
Easiest way to add some bite to a drink? More booze! But it can’t be just for the sake of booziness, it should bring some flavors to the party as well. That’s why I reached for Campari. It packs a decent punch in the alcohol department, but the flavor is strong enough to give our old pal a completely new personality. Plus, gin and Campari are already a proven combo. Here, the puckering bitterness and citrusy grapefruit notes get smoothed out by the sugar, while still adding to the overall refreshment.
Next I turned to the bubbles. Classic club soda is more than serviceable, but again, there is so much potential to bring in other flavors. My love for Palomas turned me on to the wonders of grapefruit soda. So why not go all in and let it provide the fizz and sine extra citrusy flavor. Not surprisingly, grapefruit soda made the Campari even more fruity, while slightly muting the bitterness.
Lastly I swicthed the juice from lemon to lime. A few summers ago I made two Tom Collinses, one with lemon and one with lime. Turns out I liked the lime better, so that’s been my go to ever since. With all the ingredients in the glass, the drink hit all the notes. Beefed up just enough on the alcohol side of things, and lots of new flavors bouncing around in the bubbles thanks to the grapefruit soda and Campari. I’m sure Tom Collins wouldn’t mind seeing his cousin Ruby at the next family reunion.
